Nick Sanford, owner of Toss & Fire Pizza and head of the Syracuse Food Truck Association, has one piece of advice he gives to anyone thinking about starting a food truck: be different. As someone who has watched the local food truck scene grow over the past decade, Nick has seen firsthand that standing out is everything. His number one rule is to avoid doing what ten other trucks are already doing, and instead build something that is uniquely yours — something that gives people a reason to seek you out. For Toss & Fire, that meant becoming the first mobile wood-fired pizza truck in Central New York. The lesson applies to any food truck owner, at any stage.
